Spinach and Mushrooms With Garlic

Fresh spinach and mushrooms are sauteed with shallots and garlic in butter or olive oil. It's a simple preparation and the flavors are wonderful. Shredded or grated Parmesan cheese makes an excellent garnish. 

Serve this spinach as a side dish to just about any main dish meat, poultry, or seafood.

What You'll Need

  • 1 tablespoon butter or olive oil
  • 1 pound spinach, about 2 bunches, trimmed, torn, cleaned
  • 8 ounces mushrooms, cleaned and sliced
  • 2 shallots, minced
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • Dash freshly ground pepper
  • ¼ cup fresh shredded Parmesan cheese, optional

How to Make It

  1. In a large skillet over medium heat, melt the butter with the olive oil. Add mushrooms and shallots and cook, stirring, ​until mushrooms are tender.
  2. Add the garlic, spinach, salt, and pepper. Continue cooking until spinach is tender.
  3. Sprinkle with fresh shredded Parmesan cheese just before serving, if desired.
