Start with Lemons

My Sister's Lemon Meringue Pie. Linda Larsen

Lemons are always in my kitchen. These beautiful yellow fruits can be used in soups, appetizers, main dishes, salads, and desserts. There's nothing more versatile than a lemon, and no other food will perk up a recipe as a lemon will.

When you buy lemons, look for those that are smooth and bright yellow, not shriveled, and heavy for their size. Lemons that feel light, with thick skin, will not have as much juice.

See how to get the most out of lemons to, well, get the most juice, zest, and life out of the lemons you buy. Lemons are high in vitamin C and will add flavor, especially if you're on a low salt diet. The ascorbic acid in the lemons can help food taste salty and brings out other flavors just as salt does.
