Everyone loves meatballs; they're like little nuggets of goodness. They're easy to make, easy to eat, and can be made out of any ground meat, or made vegetarian. You can also flavor them any way you'd like. I personally love frozen precooked meatballs because they are incredibly easy to use. For many casseroles, you don't even need to thaw them! These wonderful recipes all start with meatballs.

But to save money and add your own twist, make your own meatballs.

Bake a batch or two, let them cool for about 20 minutes, refrigerate them until they're cold, then freeze on a cookie sheet. When frozen solid, pack them into freezer containers and freeze. Then you can get dinner in the oven in minutes!

The trick to making the best meatballs is to handle them gently. Combine all of the flavoring and tenderizing ingredients first, then mix in the meat. Don't handle the mixture too much. You can make meatballs any size you'd like, just as long as you cook them to 160 degrees F. A medium-well meatball is a recipe for disaster.
