Summer Salads

Salads are great for summertime eating—they require minimal fuss and are the perfect way to enjoy fresh, seasonal produce. From potato and pasta salads to fresh vegetable and grains, there's a salad here perfect for your next warm weather meal.

    Move beyond the mayonnaise potato salad from the deli counter and try this easy, homemade version. It's so much better when homemade. I've added some chopped dill pickle and a little white horseradish to the dressing to give it a flavor lift. One tip for the salad is to be sure to add the dressing while the potatoes are still warm so they absorb more flavor.

    No one really knows what was in the “original” American macaroni salad, but I bet this one is pretty close. A great cold pasta salad that’s especially good served with any spicy, barbecued meat. Like most pasta salads, it’s better the next day.

    This cool, colorful, and crunchy Southwestern corn salad recipe is perfect when fresh corn is in season, and you want to bring something fabulous to that summer cookout. Frozen corn may be used, but the salad just won't have that same sweet, crisp snap.

    Green beans and fresh mint and are a great flavor combination, and have been served together in California for over a hundred years.

    The early Spanish settlers originally called San Francisco "Yerba Buena," which was a local species of wild mint that they found growing in abundance in the area. It translates to "good herb" and mint sure is a "yerba buena" in this delicious green bean salad.

    pesto pasta salad

    Pesto and pasta have a natural affinity for one another, making it a classic combination first in Italy and now in America. Traditionally it is made with basil, although you can use a mixture of other herbs such as parsley, as given here. If you are running short on time, pesto is also available ready-made in some large supermarkets. Look for it near the fresh pasta or in produce section.

The original salad was created in the 1890's by a chef at the famous Waldorf Hotel in New York City.
