Sweet and Sour Fish Sauce

Fish sauce is as ubiquitous to Vietnamese cuisine as salt is to western cuisine and soy sauce is to Chinese cooking. Here it is seasoned with other ingredients to give a sweet and sour flavor.

What You'll Need

  • 3 cloves garlic
  • 1 cup water
  • 4 tablespoons lime juice
  • 4 tablespoons sugar
  • 2/3 cup fish sauce
  • 1/2 to 1 teaspoon red chili paste (as desired)
  • Optional: thinly sliced carrot

How to Make It

  1. Finely mince the garlic
  2. In a small bowl, combine all the ingredients until the sugar dissolves.
