A quick and easy way to prepare vegetables on the grill. Though this recipe has a spicy component, it is not overbearing, but rather a subtle addition to this Asian inspired dish. Serve with grilled meat or prepare as the main dish and serve over pasta or rice. 

What You'll Need

  • 1 large can water chestnuts (drained)
  • 1 red or yellow bell pepper (seeded and diced)
  • 4-6 large mushrooms (sliced)
  • 2 green onions (sliced thinly)
  • 1/4 cup/60 mL low sodium soy sauce
  • 3 tablespoons/45 mL almonds (slivered)
  • 1 clove garlic (minced)
  • 1 teaspoon/5 mL sugar (or honey)
  • 1 teaspoon/5 mL chili in oil (use less if preferred)

How to Make It

Preheat grill for medium heat. Combine soy sauce, garlic, sugar, and chili in oil. Add vegetables to the mixture. Create a foil packet large enough to hold the mixture. Place coated vegetables into packet, top with slivered almonds, seal, and place on grill. Cook covered for 10-12 minutes. Remove from heat, let rest fro 5 minutes, carefully take apart packet, and serve.
