Simple yet flavorful vegetable stir-fry recipe combining Thai flavors with tofu, vegetables, and hoisin sauce. This vegetable stir-fry recipe is vegetarian and you can omit the honey to make it vegan.

What You'll Need

  • For the Sauce:
  • 1/4 cup lime juice
  • 3 tablespoons  hoisin sauce
  • 2 tablespoons ginger (approximately, fresh)
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup fresh cilantro (approximately, fresh, chopped)
  • 1 teaspoon honey
  • For the Stir Fry:
  • 1 block tofu (firm or extra firm)
  • 1 bell pepper (red or yellow)
  • 1 bell pepper (green)
  • 1/3 cup  mushrooms (chopped, shiitake is best, but another kind may be used)
  • 1 tablespoon olive oil (for stir-frying)

How to Make It

  1. In a small bowl, whisk together lime juice, hoisin sauce, ginger, red pepper, cilantro, and honey until combined and set aside.
  2. In a large skillet, heat a thin layer of olive oil and add tofu, stirring frequently until tofu is golden brown, about 4-6 minutes. Add peppers, mushrooms and sauce, stirring to combine. Stir-fry ​another 3-5 minutes and serve your Thai vegetable stir-fry hot over rice or noodles if desired.
