You can adjust the heat in this dry rub by changing the amount of cayenne pepper used. This is a flavorful spice mixture with a hint of heat that works perfectly as an all-purpose rub for all kinds of barbecue.
Mix together and store in an airtight container. Use on any cut of pork, beef, or poultry. Makes about 1 cup. This spice rub will keep for up to 6 months if stored in an airtight container away from direct light (light causes spices to lose flavor and color).
Apply this rub evenly to the entire surface of meats. Allow to sit on the meat, covered, for up to but no more than an hour before you start cooking.
This will allow the salt to absorb into the surface of the meat and evenly distribute.
