Tomato rice soup is made with crushed tomatoes, water or chicken broth, celery, parsley, bay leaf, and other seasonings.

What You'll Need

  • 2 cans (14.5 ounces each) tomatoes, or 1-quart canned tomatoes, crushed
  • 2 cups water or chicken broth
  • 1/4 cup chopped celery with leaves
  • chopped fresh parsley
  • 1/2 bay leaf, crumbled
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup uncooked long grain rice

How to Make It

Bring tomatoes, water, and seasonings to a boil in a large saucepan. Add rice and cook 25 minutes or until rice is tender. Taste and add more salt and pepper to taste. Tomato Rice Soup serves 4.
