There are two ways to grill corn to perfection. Husks on or husks off. To prepare with husks on, place corn right onto burning coals for a few minutes. The husks will burn and the corn will steam, slowly absorbing smoke while the sugars caramelize to perfection. Husks off, place the corn on the cooking grate over a high heat and grill until the kernels start to turn and charring appears. Turn frequently. This process caramelizes the sugars and creates a perfect flavor. With this method, the corn... can be basted with any of these flavorful butters. Truffle and White Wine Corn Butter
Don't be intimidated by this recipe, if you can find truffles, then wonderful, if not, then look for truffle salt with pieces of truffles in it. This can be found in any specialty food store and will add a lovely richness to the corn butter. You can use this on much more than vegetables. Use on all types of seafood, pork, poultry, or on other vegetables if so inclined. You'll be delighted by it and this could become your go to compound butter in the future. For this recipe we will be using truffle salt, but if you'd rather use a truffle, then prepare, chop finely, and add 1/2 tablespoon sea salt to the butter mixture.

Lemon-Oregano Corn ButterMediterranean flavors of lemon, fresh oregano, and garlic are used in this recipe. For an added Greek flair, you can also incorporate crumbled feta into the mixture. Just be careful folding the cheese into the butter, as it can lose it's texture if over mixed.
