Romantic Recipes

Here is a selection of recipes to create some sparks and most of them can be made ahead and stored in the refrigerator until you're ready to cook them.

For a Mexico theme use cazuelas (Mexican clay pots) filled with bougainvillea as a centerpiece. Use festive dishes with bright colors and add some candles in varied colors and sizes around the table to set the mood. Have Mariachi music playing in the background and you will feel like you've taken a vacation to Mexico.

    Shrimp Ceviche. Shrimp Ceviche
    The first course should be light, but full of texture. This classic Mexican recipe for Ceviche de Camarónes (Shrimp Ceviche) is a perfect blend of light flavors and a combination of textures. You can make this the day before.

    For a nice presentation, place 4-6 slices of cucumber on a plate slightly overlapping eachother. Place 1/4 cup "Ceviche de Camarónes" on top of the cucumber. Garnish with a sprig of cilantro.

    This crusty bread is perfect to serve with the appetizers as a little sustenance before the main dish. Prepare the rolls earlier in the day and cook them right before dinner so you can serve them fresh from the oven.

    Line an interesting basket with a nice cloth napkin and serve the rolls in it.

    Soup Course- Pumpkin Soup

    If you're looking for an unforgettable evening, this soup always makes a lasting impression. From its bright orange hue to it's silky texture, you can't go wrong.

    Ladle the soup into shallow bowls set on plates. Drizzle heavy cream over the top in a design such as a swirl or a zig-zag. Float a sprig of parsley on the surface for an elegant presentation.

    This classic chicken dish has origins in the Yucatan. The chicken is marinated in bitter orange and spices and cooked in exotic banana leaves. The ingredients are actually quite easy to find in most latin markets, or you can order online.

    To serve the chicken, bring it out on a large platter and serve it at the table with your best serving utensils.

    Mexican White Rice.
    The warm flavors of this rice side dish will be a great match to any main dish. The added vegetables add color and flavor to the rice and chile adds a kick of heat.

    You can also serve this at the table alongside the chicken. Spoon the finished rice onto a nice serving platter and garnish with a few sprigs of parsley on the side.

    Serve this creamy dessert as the perfect end to a romantic evening. The caramel sauce flows over the top of the creamy custard and to make it easier it can be prepared the day before.

    Place the custard on a nice plate and garnish with a sprig of mint.
