Coleslaw is one of the most inexpensive recipes around. A good large head of cabbage, the main ingredient, costs a couple of bucks. But when you make a huge bowl of this crunchy salad, what do you do with it? You could just eat it until it's gone, of course, or serve it with burgers or fried chicken, but here are five ways to use coleslaw that are delicious and cheap. They turn this wonderful side dish into a meal.
Coleslaw is easy to make. You just combine shredded cabbage and other... ingredients, such as shredded carrots, frozen peas, sliced or chopped or julienned bell peppers of all colors, sliced zucchini, mushrooms, or any vegetable you'd like with a mayonnaise dressing thinned with lemon juice. I, of course, like to add mustard to my coleslaw recipes because I think it adds the most wonderful flavor.
Coleslaw lasts for a long time too. You can usually keep it up to a week in the fridge, as long as it is well covered. Stir the coleslaw every time before you serve it. And enjoy these easy recipes.

Make a Main Dish Salad
By adding leftover cooked meat to coleslaw, you can convert this easy salad into a main dish. I used leftover cooked salmon and added a cup of frozen peas to transform basic coleslaw into a feast. Or add chicken, more sliced veggies, and sunflower seeds.

Use it in Sandwiches and Wraps
Adding fresh, cold, crisp coleslaw to a hot grilled sandwich is a great way to extend meats and add nutrition and flavor. When you're grilling the sandwich, you may want to make the sandwiches and grill them, then carefully separate and add the cold slaw, then serve. This keeps the temperature and texture at a high contrast.
