If you love steak tacos, then this recipe is sure to please. A wonderful go-to recipe for weeknight grilling or any casual get-together. Serve with a nice helping of refried beans and rice. Delicious!

What You'll Need

  • 1 1/2 pound/700 g. tri tip steak (roast, cut in half lengthwise)
  • 10-12 corn tortillas
  • 1 1/2 cups/360 mL. guacamole
  • 1 cup/240 mL. pico de gallo
  • Optional: 1/4 cup/60 mL. cilantro (finely chopped)
  • For marinade:
  • 1/4 cup/60 mL. olive oil
  • 4 tablespoons lime juice
  • 2 teaspoons/10 mL. cumin
  • 2 teaspoons/10 mL. Worcestershire sauce
  • 2 teaspoons/10 mL. onion powder
  • 2 teaspoons/10 mL. chili powder
  • 2 teaspoons/10 mL. paprika
  • 1 teaspoon/5 mL. oregano (dried)
  • 1/2 teaspoon/2.5 mL. garlic powder
  • 2 teaspoons/10 mL. salt
  • 1 teaspoons/5 mL. black pepper​

How to Make It

  1. Place tri-tip pieces into a resealable plastic bag. Combine marinade ingredients and pour over meat.  Massage marinade into meat, seal bag, and place into refrigerator for 4-8 hours.
  2. Preheat grill for medium-high meat. Remove steaks from bags and place onto grill. Cook for 20 minutes, turning occasionally.
  3. During the last half of cooking, wrap tortillas in aluminum foil and add to the grill. Turn a few times while tri-tip is finishing up. Once the beef has reached your desired doneness, remove it and the tortillas from grill. Allow meat to rest for 5 minutes before carving.
  1. To assemble, simply add a few slices of grilled tri-tip to tortilla, top with guacamole, pico de gallo, and  sprinkle with cilantro. Fold tortilla and enjoy. Serve with your favorite sides.
