A basic macaroni salad like this one is a great starting point. There are so many vegetables you can add to give it extra color and crunch. Yellow bell peppers, sliced ripe olives, diced cucumber, and diced plum tomatoes are just a few of the possibilities.

What You'll Need

  • 1 package (8 ounces) small shell or elbow macaroni
  • 1 can (6 to 7 ounces) tuna, drained, flaked
  • 1 cup mayonnaise
  • 2 tablespoons chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chopped red and/or green bell pepper
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper

How to Make It

  1. Cook macaroni according to package directions. Drain in a colander and rinse.
  2. Transfer the drained macaroni to a large bowl. Add the tuna, mayonnaise, and onion. Stir to combine and let stand for 10 minutes. Blend in the celery, chopped bell pepper, salt, and pepper.
  3. Cover and chill until serving time.
