Although reuben sandwiches aren't typically made with turkey, this healthy updated version is totally delicious. And once you make your own homemade 1000 island, you'll never buy a bottled version ever again. And a word to the wise, you don't have to be exact with that recipe – if you just eye it, it'll probably be even better! 

What You'll Need

  • ---FOR THE THOUSAND ISLAND (makes a couple servings)---
  • 1/2 cup mayo
  • 1/2 tbsp curry ketchup
  • 1 chopped egg
  • 1 tbsp chopped roasted red pepper
  • 1/2 tsp yellow mustard
  • 1/2 tsp sriracha
  • 1/4 tbsp garlic salt
  • 1/2 tbsp sweet pickle relish
  • ---FOR THE SANDWICH---
  • 1/4 Oven Roasted Turkey Breast, sliced
  • 2 tbsp red sauerkraut 
  • 2 slices swiss cheese
  • 2 slices marbled rye
  • 2 pats salted butter
  • 1.5 tbsp homemade thousand island dressing

How to Make It

 ---FOR THE THOUSAND ISLAND---

1. Begin by making the 1000 Island Dressing. In a bowl, combine the mayo with curry ketchup, mustard, sriracha, pickle relish, egg, roasted red pepper, the chopped egg, garlic, salt and pepper. Stir until everything is incorporated and set aside. You will have more than you need for this recipe, but that's ok – keep it in an airtight container for up to 4 or 5 days or until it starts to ferment. 

---FOR THE SANDWICH---

1. Take one slice of marbled rye and smear on some of your homemade 1000 island. Then add a slice of cheese, the turkey, the sauerkraut, another slice of cheese. On the remaining slice of marbled rye, give it a hearty smear of your homemade 1000 island and close the sandwich. Butter both sides with the salted butter and set aside.

2. In a medium sized skillet, add the buttered sandwich and turn the heat to medium. Let the sandwich cook for a few minutes on each side until the cheese starts to melt and the bread begins to crisp up. Once both sides are evenly browned, take it off the skillet and set aside for a minute so the cheese doesn't ooze out when you slice it. Slice the sandwich in half and serve with an extra side of 1000 island.
