Basic Roasting Instructions for Whole Turkey

  1. Heat the oven to 325° F (165° C/Gas 3)
  2. Remove the neck and giblets. Use them to prepare gravy, if desired.
  3. Place the turkey on a rack, breast side up,  in a roasting pan or large, shallow baking pan. Cover with foil.
  4. Roast for 1 hour; remove the foil. Continue roasting until the turkey registers 180° F on a food thermometer inserted into the thickest part of a thigh and at least 165° F in the breast. Alternatively, if the turkey has a pop-up timer, roast until the timer pops up. If the turkey is stuffed, make sure the center of the stuffing registers at least 165° F.
  1. Remove the turkey from the oven, transfer to a serving platter, and let the turkey rest for 15 to 20 minutes before carving.
     

Approximate Roasting Times at 325° F for an Unstuffed Turkey

5 to 7 pounds -- 2 to 2 1/2

7 to 9 pounds -- 2 1/2 to 3 hours

9 to 18 pounds  --  3 to 3 1/2 hours

18 to 22 pounds  -- 3 1/2 to 4 hours

22 to 24 pounds -- 4  to 4 1/2 hours

24 to 30 pounds -- 4 1/2 to 5 hours

Approximate Roasting Times at 325° F for a Stuffed Turkey

5 to 7 pounds -- 2 1/4 to 2 3/4

7 to 9 pounds -- 2 3/4 to 3 1/2 hours

9 to 18 pounds  --  3 3/4 to 4 1/2 hours

18 to 22 pounds  -- 4 1/2 to 5 hours

22 to 24 pounds -- 5  to 5 1/2 hours

24 to 30 pounds -- 5 1/2 to 6 1/4 hours
