Updated Turkey Mornay is a simplified version of Turkey Mornay, an after-Thanksgiving classic. You can also make it any other time of the year using sliced cooked turkey or chicken.

This easy recipe combines Alfredo sauce, cheese, and sliced cooked turkey or chicken until hot. This mixture is ladled over split and toasted English muffins, then broiled until brown. I top these open faced sandwiches with some grape tomatoes tossed with basil.

Serve these delicious sandwiches with a simple green salad, or some fresh fruit. A glass of iced tea is all you need to complete this easy meal.

What You'll Need

  • 1 cup Alfredo sauce
  • 1 cup shredded Gruyere or Swiss cheese
  • 2-3 cups sliced cooked turkey or chicken
  • 5 English muffins, split with fork and toasted
  • 3 tablespoons grated Parmesan cheese
  • 1 Tbsp. torn fresh basil leaves or 1/2 tsp. dried basil leaves
  • 1/2 cup chopped grape tomatoes

How to Make It

Place the Alfredo sauce in a medium saucepan. Stir in the shredded Gruyere or Swiss cheese. Cook this mixture over low heat until the cheese melts, stirring frequently.

Then add the turkey or chicken slices and spoon the sauce over them; heat gently on low heat until the sauce begins to bubble, stirring frequently.

Preheat the broiler.

Place the split and toasted English muffins on a broiler pan and spoon the turkey slices and cheese sauce over each muffin half.

Sprinkle with the Parmesan cheese. Broil the sandwiches 4 to 6" from the heat source until the sauce bubbles and brown spots appear on top of the sandwiches, about 5 to 8 minutes.

In a small bowl combine the chopped tomatoes and basil, if desired. Spoon this mixture over the hot sandwiches and serve immediately.
