Veggies - from the expected to the gourmet
There's no excuse not to have a veggie side dish at your grill party, considering just how easy it is to make veggie skewers. Chop, marinate in a store-bought dressing, grill, eat. It's much easier than steak, and even easier (and healthier!) than baked potatoes. Vegetable skewers can be as simple as whatever veggies you have (bell peppers, mushrooms, cherry tomatoes, onion chunks - literally anything) marinated in store-bought salad dressing (or even olive oil and balsamic vinegar) and... plopped on the grill. Salt, pepper, done. Or, you can get a little creative with your skewers. I like sweet grilled pineapple in between all those savory veggies.

Halloumi cheese is gaining popularity - and with good reason: it's incredibly, ridiculously delicious when lightly grilled, but firm, grillable cheeses have always been around. I love grilling a little bit of Indian paneer cheese. Like halloumi, paneer won't melt but rather just gets better when grilled. If you've ever had fried Indian paneer pakoras, you know what I'm talking about. Here's a few ways to enjoy cheese on your grill. Seitan isn't for everyone as it's heavy, chewy and meaty, but that just makes it perfect for people looking for a good meat replacement. And seitan is wonderful on the grill, especially as a meat substitute. Wrapping veggie in foils cooks them up nice and tender, and works well for veggies that are difficult to skewer if you don't have a grill basket, or if you just want a quick and easy side vegetable dish to serve alongside your veggie burgers.
