Vegan Chocolate Pumpkin Pie

Vegan Chocolate Pumpkin Pie. Chocolate AND pumpkin? All wrapped in one easy to prepare, completely vegan, nearly fat-free pie? It sounds too good to be true, doesn't it?

Pumpkin and chocolate actually make a great flavor combination, and this quick and easy vegan chocolate pumpkin pie is a delectable treat.

What You'll Need

  • 1/2 pound firm or extra firm tofu, pressed
  • 1 15 ounce can pumpkin
  • 1/2 cup sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/2 cup cocoa
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 2 tbsp soy milk
  • 1 pre-made pie crust

How to Make It

Pre-heat oven to 400 degrees.

Process all ingredients in a blender or food processor until smooth and creamy, adding a tiny bit more soy milk if needed.

Optionally, you can sprinkle the top of your pie with a few vegan chocolate chips, just for fun and presentation (and because extra chocolate!).

Bake for 30 to 35 minutes, or until set. Serve with a dollop of non-dairy vegan whipped cream if desired.
