When I first went vegan, I ate plenty of Mexican fast food and these days, I still frequent the local burrito shops and taquerias a little too frequently. Even though couscous isn't technically a whole grain (though it can be made from whole grain semolina flour), it acts much a whole grain in cooking, lending itself well to pilafs and mixed salads.
