One reviewer suggested doubling the recipe and wrote, "Wonderful flavor! My 5 year old daughter liked it better than any other recipes I've made this year!", and another reviewer wrote, "Lemon frosting is the bomb!". Indeed!
- 2 cups powdered sugar
- 1/4 cup margarine, softened
- 2 tbsp. soy milk
- Juice and zest from one lemon
- With an electric mixer set at low speed, cream the sugar and margarine.
- Beat in the soy milk and lemon juice.
- Stir in the lemon rind.
