Do you love potatoes au gratin but need a vegan recipe? This baked potato casserole dish is covered in a rich and creamy cheese sauce that has no dairy ingredients. This vegan version makes a thick dairy-free sauce out of nutritional yeast instead.

While there are many brands of vegan cheese on the market, you don't necessarily need them for the gratin in potatoes au gratin. You'll find that nutritional yeast can do the trick as well.

    What You'll Need

    • 3 potatoes, sliced about 1/3 inch thick
    • 1 onion, chopped
    • 1 clove garlic, minced
    • 1 Tbsp + 1/4 cup olive oil
    • 1/2 cup vegan margarine
    • 1/2 cup flour
    • 3 1/2 cups boiling water
    • 1 tsp salt
    • 2 Tbsp soy sauce
    • 1/4 tsp. turmeric
    • 3/4 cup nutritional yeast
    • 1/2-3/4 tsp paprika (optional)

    How to Make It

    1. Preheat the oven to 350 F.
    2. Bring two pots of water to a boil, one to pre-cook the potato slices (unless you will do that in the microwave instead), one for boiling water for the sauce.
    3. Slice the potatoes about 1/3 inch thick.
    4. You need to pre-cook the potatoes for them to be properly done after baking the casserole. Add potatoes to boiling water and cook for 5-6 minutes. Alternatively, you can place them in a vegetable steamer in the microwave for five minutes. Don't overcook and have your slices turn to mashed potatoes.
    1. Drain well, then spread half the potatoes in casserole dish.
    2. Chop the onions and slice the garlic.
    3. In a large skillet, sauté onions and garlic in olive oil for 3-4 minutes. Reduce heat and add vegan margarine and flour, stirring continuously until thickened.
    4. Add boiling water, salt, soy sauce and turmeric, frequently stirring until thickened. Add remaining 1/4 cup olive oil and nutritional yeast, stirring again just until well mixed.
    5. Pour half of the sauce mixture over half of the potatoes in the casserole dish; add a layer of the remaining potatoes, then cover with remaining sauce.
    6. Cover and bake for 10 minutes. Uncover, and bake for an additional 10-12 minutes. Remove the casserole from the oven. Sprinkle the top with paprika, if desired.
    7. Allow to the potatoes au gratin to cool for 10 minutes before serving, as the sauce will thicken as it cools.
