This delectable vegan seitan au jus recipe is made flavorful with a bit of liquid smoke, and red wine. Use your cooked vegan au jus to make sandwiches!

What You'll Need

  • 1 tablespoon olive oil
  • 1/4 teaspoon liquid smoke
  • 6 ounces seitan (thinly sliced; enough for two servings)
  • salt to taste
  • black pepper to taste
  • 1 cup vegetarian broth (if you can get a vegetarian "beef" broth, that'll be best)
  • 1/2 cup red wine
  • 1 clove garlic (minced)
  • 1/2 tablespoon flour
  • 1/2 tablespoon vegan margarine

How to Make It

  1. Warm the oil and the liquid smoke over medium heat in a saute pan or skillet and add the seitan, a few pieces at a time. Season lightly with salt and pepper, and cook just a few minutes, until heated through.
  2. Remove the seitan from the pan and add the broth, red wine, and garlic and simmer for 8-10 minutes to reduce the liquid.
  3. Whisk in the flour and vegan margarine, and season again with a bit of salt and pepper.
  1. To serve, drizzle a bit of the sauce on top of the seitan, and serve with extra sauce for dipping on the side. Au jus is usually turned into a sandwich, so layer your thinly sliced seitan onto a hoagie roll or French bread, and dip away!
