Also a hit with vegetarian and vegan kids, this recipe is made with brown sugar, vegan margarine, a touch of cinnamon and not much else. It is so easy and simple!

What You'll Need

  • 2 cups carrots (sliced)
  • 1 onion (sliced or diced)
  • 1/4 cup brown sugar
  • 2 tablespoons dairy-free margarine (melted)
  • 1/4 teaspoon cinnamon

How to Make It

  1. Steam the carrots in a small amount of water until tender, about 8 minutes.
  2. Drain thoroughly.
  3. In a medium saucepan, combine the carrots, onion, brown sugar, margarine, and cinnamon. Simmer, stirring occasionally for 15 minutes.
