Vegetable Soup Meatloaf

This popular recipe probably dates back to the  1960s. It's made with ground beef and condensed vegetable soup, along with seasonings. 

What You'll Need

  • 1 1/2 to 2 pounds ground beef, lean
  • 1 can condense vegetable soup (approx. 10 1/2 ounces)
  • 1 egg, beaten
  • 1/2 cup fine bread crumbs or 2 or 3 slices of bread, shredded
  • 1/2 cup chopped onion
  • 1/4 to 1/2 cup chopped green bell pepper, optional
  • 1 tablespoon prepared mustard, optional
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

How to Make It

1. Mix all ingredients together gently; shape into a loaf.

2. Place in a shallow baking dish and bake for 1 to 1 1/2 hours, or until done.
