I love using my crockpot to make meals that are ready whenever I am. I don't have to worry about the food getting cold, over-cooked or burnt. As an added bonus, I can prepare a soup in the crockpot in the morning and a main dish in the evening to have a full meal ready to go, perhaps with a green side salad if I have lettuce on hand and a few extra minutes. Try some of these quick and easy slow-cooked vegetarian soups, each of which is prepared in a crockpot or slow cooker, and see if you... just don't love them as much as I do!

Although many split pea soup recipes use ham for added flavor, this vegetarian and vegan split pea soup packs in the spices, including thyme, sage and bay leaves for a lower fat and cholesterol version of classic split pea soup. As an added bonus, with all those herbs and spices, you'll find that you need very little salt to add the flavor, making this a good choice for those on a low-salt or reduced-salt diet too. Still not convinced? It's fat-free and low-calorie, too.

Minestrone soup is a very popular vegetable soup that is quite healthy and low in fat. This vegetarian crock pot minestrone soup recipe has no oil, so it is virtually fat free as well as low in calories. You can also add extra veggies, such as sweet corn (one of my favorites!), green peas or even some pre-soaked or canned beans. From a reviewer who gave this recipe 4 out of 5 stars: "I used a small crock pot and did not get all the veggies in. A suggestion is to split the recipe or to make... sure you have a big slow cooker"

I love ravioli, but I almost never make it my hand, since it's so labor intensive. Using store bought ravioli and putting in the crockpot makes this full one-pot meals super simple and easy. Linda's ravioli stew combines carrots, ravioli and white beans in a vegetable-broth base and topped off with Parmesan cheese. A simple and filling vegetarian meal.
