Vegetarian Gravy With Fresh Herbs

This basic vegetarian and vegan gravy recipe uses fresh herbs, including sage and parsley, to get lots of flavor. You'll need a good gravy to go with a vegetarian or vegan lentil loaf recipe, mashed potatoes and of course, with Tofurky on your vegetarian Thanksgiving!

What You'll Need

  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1/2 teaspoon fresh parsley, minced
  • 1/2 teaspoon fresh sage, minced
  • 1/4 teaspoon thyme
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons water
  • 2 teaspoons nutritional yeast (*Optional)

How to Make It

  1. Bring the vegetable broth to a simmer in a medium pot or large skillet.
  2. Add the soy sauce and herbs.
  3. Reduce heat to a simmer, then slowly add the cornstarch and water mixture, stirring constantly to thicken.
  4. Allow to simmer for a few minutes, until thick, and add nutritional yeast if desired.
