5 Delicious Ways to Fill an Omelet

    Find Your Favorite Omelet Filling

    We are a huge egg family. Scrambled, fried, frittata-ed, and of course, omelets. We love omelets because they are such a great way to use up leftovers, to play around with different flavor combinations, and to turn a few eggs into something that feels like a real meal. They are also a great vehicle for hot sauce, which is another family favorite.

    Fillings can range from vegetables to cooked or smoked meats, cheeses, even jam. A single two to three egg omelet should have about 3 to 6 tablespoons...MORE of filling, placed on one side of the eggs in the pan, and the filling should be crumbled or chopped into very small pieces so that the eggs will easily fold over it. When the eggs have set on the bottom, sprinkle half of the eggs with whatever filling you choose. Then fold the other half over the filling, and let the middle finish cooking.

    Fill your omelet with...

    • caramelized onions (thinly sliced onions that have been cooked in a bit of butter or oil over low heat for about 30 minutes until they are very soft and nicely browned)
    • sautéed broccoli rabe (roughly chop some broccoli rabe and sauté it in a bit of butter or oil for 10 minutes until it is almost tender)
    • grated Emmenthaler cheese (or any cheese you or your kids like!)

    Try a combination of...

    • sautéed mushrooms (sauté some sliced mushrooms – any kind -  in a bit of butter or oil in a skillet over medium high heat)
    • spinach (once the mushrooms have started to brown, and a handful or two of fresh baby spinach leaves)
    • shredded mozzarella (you can use fresh or packaged mozzarella, your choice)

    • cooked black beans (perfect when you have leftovers)
    • grated cheddar cheese
    • salsa (or instead of the filling, use it to top the omelet)

    • crumbled feta
    • chopped or sliced olives (preferably Greek)
