I've probably made and eaten more macaroni and cheese than anyone else. I love the comforting cheesy goodness that reminds me of childhood and home. It's rich, creamy, buttery and it tastes like nostalgia. There are endless possibilities to creating whacky flavor combos so it's super fun to play around with different concepts. On this post, I share a few of my favorite ways that I've turned this childhood classic into a grilled cheese sandwich. So whether you're a purist and... you like it straight and simple, you prefer one that reminds of you of the islands, or you just want something easy to use as a vessel in hopes of getting your kids to eat their veggies - these sandwiches will most definitely do the trick!

This grilled macaroni and cheese sandwich is filled with tender braised short ribs and umami-rich steak sauce. I used velveeta macaroni and cheese because it was all I had on hand, but you should totally use some of the good stuff. I recommend using one of our Southern Food Expert's mac n cheese recipes because she has about a million of them and they all look amazing.

Did someone say spicy jalapeno mac n cheese grilled cheese? That's right! And with this quick and easy recipe, feel free to use any leftover mac n cheese you have on hand or follow the recipe below for my take on it.
And if you're having a hard time imaging how all that mac n cheese doesn't fall out of the bread, the trick is letting the pasta get cool and firm up - basically creating a cheesy glue that helps everything stay together.
