This prime rib is delicious and tender. It's a little time-consuming but well worth the wait because the slow, smoky roasting method takes the flavor to a whole new level. This is a great addition to any special occasion.
- Prepare smoker for an 8-hour cooking time. Soak wood chips in bourbon and 1/2 cup (120 mL.) water.
- Rub roast with seasonings and place on the top grate. Place a few handfuls of wood chips onto the fire. Close lid and check every 40 to 50 minutes. Be sure to add more wood chips every time the roast is checked. Smoke roast for about 8 hours or until internal temperature reaches 140 to 145 F (60 to 63 C).
- Allow to rest for 10 minutes before carving.
