Easy Zucchini Squares

These popular zucchini squares are always a hit. The quiche-like squares are a snap to prepare and bake. The recipe uses biscuit mix. The squares can be made with this biscuit baking mix substitute as well.

What You'll Need

  • 3 cups thinly sliced zucchini, unpeeled
  • 1 cup biscuit mix
  • 1/2 cup finely chopped onion
  • 1/4 teaspoon dried leaf oregano
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • dash garlic powder
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup vegetable oil
  • 4 eggs, lightly beaten

How to Make It

  1. Heat the oven to 350 F.
  2. Combine all ingredients in a large bowl; mix well.
  3. Pour the mixture into a 9-by-13-by-2-inch baking pan. Bake for about 30 minutes, or until lightly browned.
  4. Cut into squares and serve as an appetizer or side dish.
